There's precious few destinations to go to, even then each has it's attendant obstacles. Majorca, you'll need the gas to stay with a rampaging peloton of old German men who can work an echelon and ne'er a hill to shake them off. Lanzarote, utterly boring flat roads, route 66 style with tri hards sniffling their way past you in that fund trader style that makes you want to drop them and it's usually easy to do. Gran Canaria, the new upstart is lactic hell, short routes full of pain and descents that demand all brain cells on "on". Take your pick of pain, I'd go for the fun.
