I have two sets of wheels. One is a set of Easton EA90 SLX clinchers. Since I don't race anymore, these are my nice wheels. I also have a pair of Fulcrum 7's. They are both a few years old and Shimano / Sram 9/10 compatible. How can I find out of they are compatible with Shimano 11 speed? It is my understanding this not a given. Any insight on this?

Eastons will need a different hub for 11v

I sold a 10v Easton R4SL hub body on eBay a few weeks ago and had someone ask if the 11 will fit, I tried and it wouldn't

I thought the rule of thumb was if you had to add a spacer under your 10 speed cassette to get the top lock nut to tighten , then it was 11 speed compatible. If no ring spacer is needed, than 11 won't fit.

Neither will work without a new cassette body (if available) and redish.

Easiest route is use Wheels Mfg Accellerator cassette, which is an 11 speed Campy cassette made to work on 10 speed Shimano cassette bodies. Have heard from several people who've used them that they're nearly perfect.

Thanks for the input. Very helpful in making my decision. I am going to build up a new (to me) road bike, and given that I have these wheels and a few cassettes that are 10 speed, I think I will stick with it for now.

Get a campy compatible freehub for the Fulcrum and use a Campy 11 speed cassette on your 11 speed Shimano group. If the Easton's have the same option do that with them too. If you change to a Shimano 11 speed freehub you need to reddish the wheel
