Zipp 202 Zipp 303 Zipp 404... don't want to go that deep. 40mm is about as much as I'd want ...or something else? I'm old and slow, don't want to fight the wind with deep section wheels, plus I'm not a big guy and wrestling deep wheels is a challenge. I'm leaning towards the 202 due to weight but could be convinced that the 303's are a better way to go Maybe a 202/303 combo, or 303/404? Chime in. Suggest other brands if you like them better. The only carbon wheels I have are a set of cheap Chinese ones I use for cx (disc) and another cheap set that I've used for road but the front got dinged in a pothole and they have lousy braking (rim brakes) Or do I leave well enough alone and continue with my Easton aluminum wheels?

Hands down the 404’s...(or a similar depth from another brand). IMO, that depth give you the best combination of aero, weight and all-around performance. 50-60mm rims really arena’t that hard to control.
Can you rent / demo a set for awhile before making a decision?
I wouldn’t consider anything shallower than 303’s (or similar depth from another brand). waste of time looking at 202’s given you are looking for all-around performance.
My Canyon came with Reynolds Strike wheels. They have been OK, but a bit more noticeable in wind than I have experienced with other wheels. Not horrible or anything I would consider unsafe, but definitely more noticeable.
Other brands to consider? FLO Wheels have an excellent reputation, but are a bit heavier than others of similar depth (but also much lower $$$). Enve are of course great but big $$$.
I think Steep & Cheap has HED Jet 5’s or 6’s for ~$1K right now...had a set of those on my Venge and liked them a LOT. Never had any issue with wind on them, either. That may actually be my first choice now that I think about it. Plus they sound cool when rolling along.
Just say "NO!" to WCP!!!!

Found ‘em....$1100. Plus alloy braking surface, which IMO is FAR superior to carbon. I’ll take the small weight “penalty” for improved braking.

I have a set of Hed Belgium rims/DT 350 hubs. I have over 10K on them. I ride crappy chip sealed roads with lots of potholes after the very raining winter in norcal. They are the most durable rims I have used. I had not had to touch them. Long time user of Mavic OP/Campy hubs. I think you can have set built up for around $800.00.

In the same line of thinking as CK, the aluminum rim is a good move and in that case I'd suggest looking at the Mavic Cosmic Carbone SLR (or whatever it is they have with the Exalith braking surface.) Since it's all black, it looks like a full carbon rim. Features the latest ovoid rim shape that is a massive improvement over old V-section deep rims. I was pleasantly surprised. Braking is as good as you'll get with rim brakes.
I've seen them on sale for $1100 recently. I've had seemingly every iteration of Zipps over the years and these just seemed like the best all-around aero set to me.
